Fruit fermentation for 6 to 7 weeks. Main varieties used: Ente plum, knife plum, Sainte-Catherine plum, Monsieur plum (20 kg of fruit for one liter of alcohol). Distillation in a steam-heated copper still. Aging in oak barrels. Marriage of the barrels 6 months to a year before bottling.
